Ingredients
  

For the Salad:

  • 2 cups cooked chicken shredded or cubed
  • 3 cups fresh broccoli florets chopped
  • 1/2 cup shredded cheddar cheese optional
  • 1/4 cup sunflower seeds or chopped almonds
  • 1/3 cup red onion finely diced

For the Dressing:

  • 1/2 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions
 

Step 1: Prepare the Broccoli

  • Blanch the broccoli in boiling water for about 1 minute, then transfer to a bowl of ice water to cool. Drain thoroughly.

Step 2: Cook and Shred the Chicken

  • Use baked, poached, or rotisserie chicken. Let it cool, then shred or cut into bite-sized cubes.

Step 3: Make the Dressing

  • In a small bowl, whisk together the yogurt, mayo, vinegar, mustard, garlic powder, salt, and pepper until creamy.

Step 4: Assemble the Salad

  • In a large bowl, combine the chicken, broccoli, red onion, sunflower seeds, and cheese (if using). Pour the dressing over the top and gently toss until evenly coated.

Step 5: Chill and Serve

  • Cover and refrigerate for at least 30 minutes to let the flavors blend. Serve chilled, as a main dish or hearty side.
