Oatmeal Chocolate Lava Cake

Ingredients
  

  • 3 tablespoons oat flour or ¼ cup rolled oats, finely blended
  • 1 tablespoon unsweetened cocoa powder
  • tablespoons maple syrup or coconut sugar
  • 1 tablespoon plain Greek yogurt or dairy-free yogurt
  • 1 tablespoon coconut oil melted
  • 2 tablespoons unsweetened almond milk
  • ¼ teaspoon baking powder
  • Pinch of sea salt
  • 1 square about 10g dark chocolate (70% cocoa or higher)

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a small bowl, mix the oat flour, cocoa powder, baking powder, and salt.
  • Add in maple syrup, Greek yogurt, melted coconut oil, and almond milk. Stir until smooth and well combined.
  • Lightly grease a ramekin or small baking dish.
  • Spoon half of the batter into the dish.
  • Place the chocolate square in the center.
  • Cover with the remaining batter, smoothing the top.
  • Bake for 10–12 minutes, until the edges are firm but the center still jiggles slightly.
  • Let it rest for 1 minute, then invert onto a plate or enjoy straight from the ramekin.

Notes

Optional Toppings:

  • A spoonful of Greek yogurt or coconut cream
  • Fresh berries or a dusting of cocoa powder
  • A few crushed nuts for crunch
