Oatmeal Chocolate Lava Cake
A healthy single-serve lava cake made with oats, dark chocolate, and natural sweeteners. Gooey center, gluten-free, and portion-controlled.

- 3 tablespoons oat flour or ¼ cup rolled oats, finely blended
- 1 tablespoon unsweetened cocoa powder
- 1½ tablespoons maple syrup or coconut sugar
- 1 tablespoon plain Greek yogurt or dairy-free yogurt
- 1 tablespoon coconut oil melted
- 2 tablespoons unsweetened almond milk
- ¼ teaspoon baking powder
- Pinch of sea salt
- 1 square about 10g dark chocolate (70% cocoa or higher)
Preheat oven to 375°F (190°C).
In a small bowl, mix the oat flour, cocoa powder, baking powder, and salt.
Add in maple syrup, Greek yogurt, melted coconut oil, and almond milk. Stir until smooth and well combined.
Lightly grease a ramekin or small baking dish.
Spoon half of the batter into the dish.
Place the chocolate square in the center.
Cover with the remaining batter, smoothing the top.
Bake for 10–12 minutes, until the edges are firm but the center still jiggles slightly.
Let it rest for 1 minute, then invert onto a plate or enjoy straight from the ramekin.
