For the Dough:
- 3 ½ cups bread flour plus extra for dusting
- 1 ¼ tsp salt
- 1 tsp active dry yeast
- 1 ½ cups lukewarm water
- 1 tbsp olive oil
- Semolina flour for dusting pizza peel or tray
For the Toppings:
- 2 –3 heirloom tomatoes mixed colors, thinly sliced
- ½ cup shredded mozzarella or 1 ball fresh mozzarella, torn
- Optional: ½ ball burrata cheese or goat cheese
- 1 tbsp extra virgin olive oil
- Fresh basil leaves
- Sea salt to taste
- Freshly cracked black pepper
- Optional: Balsamic glaze chili flakes, arugula for garnish
Step 1 – Make the Dough
In a large bowl, combine bread flour, salt, and yeast.
Gradually add lukewarm water while stirring until dough begins to form.
Knead by hand for about 5–7 minutes until smooth.
Drizzle olive oil over the dough, cover, and let it rest for 30 minutes.
For best results, refrigerate for 24 hours to allow slow fermentation.
Step 2 – Preheat the Oven
Place a pizza stone or steel in the oven.
Preheat to 500°F (260°C) or as high as your oven allows.
Let the oven and stone preheat for at least 30 minutes.
Step 3 – Shape the Dough
Remove dough from the fridge and let it rest at room temp for 1 hour.
Divide into two equal portions.
On a floured surface, gently stretch each piece into a round pizza shape.
Avoid overworking, keep the shape rustic and organic.
Step 4 – Assemble the Pizza
Dust your pizza peel or tray with semolina flour.
Lay the stretched dough on the peel.
Layer thinly sliced heirloom tomatoes evenly over the dough.
Add mozzarella (and burrata/goat cheese if using).
Drizzle with olive oil and season with sea salt and pepper.
Step 5 – Bake
Slide pizza onto the hot stone/steel.
Bake for 7–10 minutes, or until the crust is golden and blistered, and cheese is bubbly.
Step 6 – Garnish and Serve
Top with fresh basil leaves.
Optional: drizzle with balsamic glaze or sprinkle chili flakes.
Serve immediately on a rustic board or tray.
